PIXIS is the Greek word for coagulation and is also a Greek family business based in Elassona that produces and distributes throughout Greece high quality natural animal rennet products. Although recently established, the company brings at least 40 years of family experience in the trade of animal rennet in the form of raw dried abomasums

Our vision for years has been to create a laboratory where the high quality of the raw traditional product meets the modern methods of processing and standardization. So, driven by passion and perseverance and guided by observation and study, we have recently reached the realization of our initial conception with the establishment of the new company. We have established a modern production unit of European standards, capable, through innovative production methods, of making available to the cheese-making public almost all recognizable rennet types:

Liquid rennet

Natural liquid rennet of animal origin.

From dried abomasums of nursing goats (≈̴85%) and lambs(≈̴15%). With sodium chloride. Without preservatives and other additives.

The abomasums are collected from certified slaughterhouses in the country and then are subjected to rigorous sorting, cleaning and meticulous processing.

Ideal for the production of various types of PDO cheeses and ripening dairy products such as barrel FETA. It gives the product an incomparable taste.

Rennet paste

Natural reconstituted rennet of animal origin.

Made from mashed and salted goat (≈̴80%) and lamb (≈̴20%) abomasums. With 100% Greek sea salt. Without preservatives and other additives.

The abomasums are collected from certified slaughterhouses in the country and then are subjected to rigorous sorting, cleaning and meticulous processing. Exclusive product due to the limited quantity of raw materials in the Elassona area.

Natural reconstituted rennet

Natural reconstituted rennet of animal origin.

A product that provides the microbial purity of a liquid rennet or rennet powder while retaining the organoleptic characteristics of a rennet paste.

With a high coagulating power of 210 IMCU/g, i.e. 140 g of paste is capable of curdling 1000 L of milk at 32°C in 40 min.

A very practical product, since it is ready to use by simply dissolving it in water, without the need for extraction and filtration. A product particularly demanding in its preparation and also at an unbeatable price. Ideal for the preparation of various types of PDO cheeses and dairy products that, like FETA, do not require high heat treatment. Able to give the cheese product a unique and unsurpassed taste.
