The abomasums are collected from certified slaughterhouses in Greece, at the right time, with the right salting conditions. Then they are subjected to strict sorting, cleaning, meticulous processing and drying in such conditions that the final product achieves maximum performance.
The collection and processing are carried out by experienced people so that we can guarantee the microbiological purity as well as high concentration of enzymes in our products.
The abomasums of this category are collected and classified into three grades according to the percentages of chymosin:
Α) over 95% ,
Β) 90-95%
Γ) 85-90%.
Ideal for the production of various types of PDO cheese such as FETA. Able to give the cheese product a unique and incomparable taste.
For packing raffia bags are used, containing up to 1000 pieces of abomasums and weighting from 8 to 11 Kg depending on the category.
